Here is a map of old forest by biogeoclimatic zone subvariant. The definition of Old Growth was based on the Biodiversity Guidebook. As you can tell it is pretty limited. Typically, the amount of old growth forests should be about 35-40% according to the old growth analysis done by Holt et al. As for the 200 year old for IDF thing that BCTS is saying that is an older mature value used to select recruitment forest to grow into old growth.
